This Kalbi Beef Ribs and Broccoli Stir Fry is a “what to do with our leftovers” from yesterday’s Kalbi BBQ Beef Rib Buns post. The thing is… I didn’t take the picture of the finished product! Horror of horrors. I’m so sorry. Looks like we inhaled it before I could even say “Cheeeese!”. Yep, it was that yummy and easy to make too because you’ve already done all the hard work of an entire 15 minutes to make that “Kalbi Dog” as my kids call it.
This one doesn’t even need a lot of prep. 2 ingredients, salt and pepper to taste and you’re done! My darling friends often think my dishes are “fancy” haha and nobody believed me at first when I say it took all of 30 mins. Listen, I was on calls all day long and traveling most of the month. Welp. Now you know how the magic happens behind the scenes. Nope I’m not even embarrassed about using pre-made marinades or frozen cheese tortellinis to make that yummy Spinach Tortellini Soup from Magnolia Table’s Cookbook. Yes, you can grab a copy from the books category under Shop Our Favorites and (double) yes, the marvelous Joanna Gaines uses them too everyone. My kinda gal cause a girl’s gotta do what a girl’s gotta do!
p.s. If you have other vegetables like red bell peppers, you can slice them up and add them too.
INGREDIENTS
1 table spoon of Olive Oil (or Ghee)
1 pound leftover Kalbi BBQ Beef Ribs (thinly sliced). If you don’t have leftovers, it takes 2 ingredients and 15 mins to make them. Recipe here.
1 large yellow onion (Cut in half and thinly sliced)
2 garlic cloves (smashed)
1 large head of broccoli (cut into bit sizes pieces)
2 tablespoons of chicken stock or water
Salt and Pepper to taste
DIRECTIONS
Heat oil or Ghee over medium high heat
Sautee onions and garlic
Add the sliced beef ribs and stir for 3-5 minutes until heated through
Next add the cut broccoli, chicken stock or water, salt and pepper to taste. Stir fry, lower the heat, cover and let the broccoli cook through for about 3 minutes. If you have extra veggies around like sliced red bell peppers, add them in here too.
That’s all folks! Serve with a bowl of steaming white rice or just eat it on its own.
